Description

A delightful blend of flavors and textures with juicy meatballs, fresh vegetables, and creamy tzatziki sauce.


Ingredients

  • 1 lb Ground beef or lamb
  • 1/2 cup Breadcrumbs
  • 1 Egg
  • 2 cloves Garlic, minced
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 cup Couscous
  • 1 Cucumber, diced
  • 1 cup Cherry tomatoes, halved
  • 1 Red onion, sliced
  • 1/2 cup Tzatziki sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the ground meat with breadcrumbs, egg, minced garlic, oregano, salt, and pepper. Form into meatballs.
  3. Place meatballs on a baking sheet and bake for 20-25 minutes until cooked through.
  4. Prepare couscous according to package instructions.
  5. Dice cucumbers, halve cherry tomatoes, and slice red onions.
  6. Layer couscous, meatballs, cucumbers, tomatoes, and onions in bowls. Drizzle with tzatziki sauce before serving.

Notes

For additional flavor, consider adding feta cheese crumbles or using ground turkey for a lighter option.
