  • 1 cup spinach or mixed greens
  • 1/2 cup feta cheese, crumbled
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon dill
  • 1 tablespoon lemon juice

Instructions

  1. Start by preheating your grill or skillet over medium heat. Season the chicken breasts with olive oil, salt, and pepper.
  2. Cook the chicken for about 6-7 minutes on each side, or until fully cooked through.
  3. Let the chicken rest for a few minutes before slicing it.
  4. Combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and a pinch of salt in a bowl to make the tzatziki sauce.
  5. Mix everything well until creamy.
  6. Layer cooked quinoa or brown rice in bowls.
  7. Add a generous amount of spinach and diced veggies on top.
  8. Place the sliced chicken on top and drizzle with tzatziki sauce.
  9. Sprinkle crumbled feta cheese over everything.
