Description

Delicious hand pies filled with the unique tartness of Goumi berries, wrapped in a flaky crust. Perfect for any occasion!


Ingredients

  • 2 cups Goumi berries (fresh or frozen)
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 4 tablespoons butter, cold and cubed
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 egg (for the egg wash)
  • Optional: 1 teaspoon vanilla extract, zest of 1 lemon

Instructions

  1. Mix the dry ingredients: In a large bowl, combine flour and salt.
  2. Cut in the butter: Add cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix until the butter pieces are about the size of peas.
  3. Add cold water: Slowly add cold water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overwork the dough.
  4. Chill the dough: Form the dough into a disc, wrap it in plastic, and refrigerate for at least 30 minutes.
  5. Prepare the filling: Rinse and dry fresh Goumi berries, or thaw and drain frozen berries.
  6. Combine the ingredients: In a bowl, mix the berries with sugar, cornstarch, and lemon juice.
  7. Cook the filling: Transfer the berry mixture to a saucepan and cook over medium heat until thickened, about 5-7 minutes. Remove from heat and let cool.
  8. Roll out the dough on a floured surface to about 1/8-inch thickness.
  9. Add a spoonful of the cooled filling to the center of each dough circle.
  10. Seal the pies: Fold the dough over the filling to form a half-moon shape and press the edges with a fork to seal.
  11. Apply egg wash: Brush the tops of the hand pies with a beaten egg.
  12. Cut small slits on top of each pie to allow steam to escape.
  13. Preheat your oven to 375°F (190°C).
  14. Bake the pies on a parchment-lined baking sheet for 20-25 minutes or until golden brown.
  15. Cool the pies on a wire rack before serving.

Notes
