Description

A rich and visually spectacular dessert that combines chocolate, caramel, and pecans, inspired by classic turtle candies.


Ingredients

  • 1 cup All-Purpose Flour
  • ½ cup Cocoa Powder
  • 1 teaspoon Baking Powder
  • ¼ teaspoon Salt
  • 4 Large Eggs
  • 1 cup Granulated Sugar
  • ¼ cup Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • ½ cup Caramel Sauce
  • ½ cup Pecan Halves, finely chopped
  • ½ cup Heavy Cream
  • 1 cup Semi-Sweet Chocolate Chips
  • Extra Pecan Halves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet.
  2. Sift together the flour, cocoa powder, baking powder, and salt.
  3. Combine the eggs and sugar and beat until fluffy.
  4. Add vegetable oil and vanilla, mixing until incorporated.
  5. Fold in the dry ingredients and spread the batter in the baking sheet.
  6. Bake for 12 to 15 minutes until a toothpick comes out clean.
  7. Roll the hot cake with parchment paper and let cool.
  8. Unroll the cake and spread caramel sauce and chopped pecans.
  9. Roll the cake back up and place seam-side down.
  10. Simmer heavy cream and pour over chocolate chips to make ganache.
  11. Pour ganache over the cake and garnish with whole pecans.
  12. Chill before slicing and serve.

Notes

For best results, use room temperature eggs and high-quality ingredients.
