Ingredients

  • 1 cup brewed coffee
  • 1 cup crushed gingerbread cookies
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 tablespoon gelatin
  • 1/4 cup cold water
  • Chocolate or shiny glaze for topping

Instructions

  1. Combine cold water and gelatin in a bowl. Let it sit for 5 minutes until softened.
  2. Heat brewed coffee, sugar, and spices in a saucepan until warm. Add the gelatin mixture and stir until dissolved.
  3. Whip the heavy cream in a separate bowl until soft peaks form.
  4. Fold in the coffee mixture and crushed gingerbread cookies.
  5. Pour the mousse into dome molds and refrigerate for at least 240 minutes or until set.
  6. Carefully unmold the mousse domes and top them with glaze or a chocolate shell.
