Instructions
- Preheat your oven to 325°F (163°C).
- Combine the gingerbread cookie crumbs, melted butter, brown sugar, and a pinch of salt in a bowl. Mix well.
- Press this mixture into the bottom of a lined pan to form your crust. Bake the crust in the preheated oven for about 8 minutes.
- Mix the cream cheese and sugar together in a large bowl until smooth while the crust is baking.
- Add the eggs, vanilla, and sour cream, and mix until everything is well combined.
- Pour this creamy filling over the baked crust and smooth out the top.
- Bake the cheesecake bars for 25–30 minutes, or until the filling is set.
- Let the bars cool fully at room temperature, then chill in the fridge before slicing and serving.
