- 2 cups Fresh Zucchini (grated)
- 1 cup Semi-Sweet Chocolate Chips (divided)
Instructions
- Preheat your oven to 350°F (175°C) with the baking rack positioned flat in the center.
- Line an 8×8-inch baking pan with parchment paper and grease the edges.
- Combine the flour, sugar, cocoa powder, baking soda, and salt in a large bowl.
- Whisk vigorously for 30 seconds to break up lumps.
- Pour the oil and vanilla into the dry ingredients.
- Add the grated zucchini and mix until a thick batter forms.
- Fold in ½ cup of chocolate chips until evenly distributed.
- Spread the batter in the prepared pan and top with remaining chocolate chips.
- Bake for 25 to 30 minutes until edges look firm.
- Cool completely before slicing into squares.
Notes
Do not squeeze out the moisture from the zucchini for best results.
