- 100 g (⅔ cup) premium butterscotch chips
Instructions
- Preheat your baking oven to 175°C (350°F).
- Line an 8 × 8-inch (20 × 20 cm) baking pan with parchment paper, ensuring a 2-inch overhang.
- Place the dark chocolate and butter into a heatproof bowl over simmering water; stir until melted and glossy.
- Cool the mixture for 5-10 minutes until warm.
- Chop the walnuts into bite-sized pieces and combine with butterscotch chips; set aside.
- In a mixing bowl, combine eggs, granulated sugar, and light brown sugar; beat on medium-high speed until thick and fluffy (4-5 minutes).
- Slowly stream in the cooled chocolate mixture; add vanilla and salt, and fold gently.
- Sift in flour and cocoa powder; fold carefully until dry streaks disappear.
- Pour the batter into the prepared pan, smoothing the surface.
- Sprinkle walnuts and butterscotch chips over the top, pressing some into the batter.
- Bake for 28-35 minutes until edges are set; toothpick test should yield moist crumbs.
- Cool completely in the pan before lifting out with parchment.
- Slice into a 4 × 4 grid yielding 16 squares.
Notes
For best results, beat the eggs and sugars thoroughly to achieve the ideal crinkle top. Brownies can be stored at room temperature in an airtight container for up to 4 days or frozen for 3 months.
