- 4 chicken thighs
- 1/2 cup Dijon mustard
- 1/4 cup olive oil
- 2 tablespoons melted butter
- 1/4 cup white wine or vermouth
- 1 teaspoon dried thyme
- 1 teaspoon cayenne pepper or paprika
- 1/2 cup breadcrumbs
- Salt and pepper to taste
Instructions
- Marinate the chicken: In a bowl, whisk together Dijon mustard, olive oil, melted butter, white wine, thyme, and cayenne pepper. Coat the chicken thoroughly and let it sit for at least an hour or overnight.
- Preheat your grill to medium heat (around 375°F).
- Grill the chicken using the indirect grilling method, placing it away from the direct flame. Grill slowly, basting frequently with the marinade for about 30-40 minutes.
- Sprinkle breadcrumbs on top of the chicken about ten minutes before it’s done, continuing to baste.
- Serve the chicken hot, allowing it to rest for a few minutes before slicing.
Notes
For more intense flavor, let the chicken marinate overnight. You can also bake it in the oven at 375°F for about 45 minutes if grilling is not an option.
