- 8 oz dark chocolate (60-70% cocoa)
- ½ cup unsalted butter
- 5 large eggs
- 1 cup granulated sugar
- 1 tsp vanilla extract
- ¼ tsp salt
- ¾ cup unsweetened cocoa powder
- ½ cup heavy cream (for ganache)
- 2 oz dark chocolate (for ganache)
- 2 tbsp unsalted butter (for ganache)
Instructions
- Preheat your oven to 325°F (163°C). Grease and line an 8-inch round cake pan with parchment paper.
- Melt the dark chocolate and butter together using a double boiler or microwave until smooth.
- Whisk the eggs and sugar in a separate bowl until lighter in color. Add the vanilla extract and salt.
- Pour the melted chocolate mixture into the egg mixture while whisking continuously.
- Sift in the cocoa powder and fold gently until smooth.
- Pour the batter into the prepared pan and smooth the surface.
- Bake for 30 to 35 minutes until the center is slightly soft.
- Allow the cake to cool before removing it from the pan.
- Heat the heavy cream until steaming, then pour over chopped chocolate for the ganache.
- Stir until smooth and then add butter. Pour ganache over the cooled cake.
- Decorate with chopped nuts or chocolate shavings as desired.
Notes
For best results, chill the cake overnight to enhance texture and flavor. Serve with fresh berries or a scoop of ice cream.
