Description

Delicious birria tacos featuring tender beef and a savory dipping sauce, perfect for a flavorful meal.

Ingredients

Scale
  • 2 lbs beef (chuck roast or brisket)
  • 4 cups beef broth
  • 5 dried guajillo peppers
  • 3 dried ancho peppers
  • 1 onion, quartered
  • 4 cloves garlic
  • 2 tsp cumin
  • 1 tsp oregano
  • Salt to taste
  • Corn tortillas
  • Oaxacan cheese or cheddar, shredded
  • Lime wedges
  • Chopped onions
  • Cilantro for topping

Instructions

  1. Soak the dried peppers in hot water until softened, then blend with onion, garlic, cumin, oregano, and 1 cup of the beef broth until smooth.
  2. In a pot, sear the beef until browned, then add the blended mixture, remaining beef broth, and salt.
  3. Cover and braise on low heat for about 120-180 minutes until the beef is tender.
  4. Shred the beef and reserve some broth for dipping.
  5. Heat a skillet over medium heat, place a corn tortilla, add some beef and cheese, fold and crisp on both sides.
  6. Serve tacos with the reserved consomé, lime wedges, and toppings.

Notes

For best flavor, soak the peppers well and use fresh corn tortillas.
