Ingredients

- 2 lbs beef (chuck roast or brisket)
- 4 cups beef broth
- 5 dried guajillo peppers
- 3 dried ancho peppers
- 1 onion, quartered
- 4 cloves garlic
- 2 tsp cumin
- 1 tsp oregano
- Salt to taste
- Corn tortillas
- Oaxacan cheese or cheddar, shredded
- Lime wedges
- Chopped onions
- Cilantro for topping
Instructions
- Soak the dried peppers in hot water until softened, then blend with onion, garlic, cumin, oregano, and 1 cup of the beef broth until smooth.
- In a pot, sear the beef until browned, then add the blended mixture, remaining beef broth, and salt.
- Cover and braise on low heat for about 120-180 minutes until the beef is tender.
- Shred the beef and reserve some broth for dipping.
- Heat a skillet over medium heat, place a corn tortilla, add some beef and cheese, fold and crisp on both sides.
- Serve tacos with the reserved consomé, lime wedges, and toppings.
Notes
For best flavor, soak the peppers well and use fresh corn tortillas.
