- 1 1/2 cups graham cracker crumbs
- 5 tbsp unsalted butter, melted
- 2 tbsp granulated sugar
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp sour cream
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- Fresh raspberries (optional)
- Fresh blueberries (optional)
- Fresh mint leaves (optional)
Instructions
- Preheat your oven to 325°F (163°C). Line a 12-cup muffin pan with paper liners.
- Mix the graham cracker crumbs, melted butter, and sugar until combined. Divide the mixture among the muffin cups and firmly press into the bottoms.
- Bake for 5 minutes and let cool slightly.
- Beat the cream cheese in a large mixing bowl until smooth and creamy. Add 1/2 cup granulated sugar and mix until fully combined.
- Add the eggs one at a time, then mix in the vanilla extract and sour cream for extra creaminess.
- Divide the cheesecake batter evenly over the crusts, filling each cup nearly to the top.
- Bake for 16-18 minutes, or until the centers are just set with a slight jiggle.
- Cool the cheesecakes completely in the pan before transferring to the refrigerator. Chill for at least 3 hours or overnight.
- Whip the heavy cream and powdered sugar until stiff peaks form and pipe or spoon it onto each Mini Cheesecake.
- Garnish with fresh raspberries, blueberries, and mint leaves before serving.
