Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 5 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp sour cream
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • Fresh raspberries (optional)
  • Fresh blueberries (optional)
  • Fresh mint leaves (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Line a 12-cup muffin pan with paper liners.
  2. Mix the graham cracker crumbs, melted butter, and sugar until combined. Divide the mixture among the muffin cups and firmly press into the bottoms.
  3. Bake for 5 minutes and let cool slightly.
  4. Beat the cream cheese in a large mixing bowl until smooth and creamy. Add 1/2 cup granulated sugar and mix until fully combined.
  5. Add the eggs one at a time, then mix in the vanilla extract and sour cream for extra creaminess.
  6. Divide the cheesecake batter evenly over the crusts, filling each cup nearly to the top.
  7. Bake for 16-18 minutes, or until the centers are just set with a slight jiggle.
  8. Cool the cheesecakes completely in the pan before transferring to the refrigerator. Chill for at least 3 hours or overnight.
  9. Whip the heavy cream and powdered sugar until stiff peaks form and pipe or spoon it onto each Mini Cheesecake.
  10. Garnish with fresh raspberries, blueberries, and mint leaves before serving.
