- 1 1/4 cups steel-cut oats
- 3/4 cup molasses
- 3/4 cup flour
- 2/3 cup flaxseed
- 1/4 cup water
- 2 tablespoons cornstarch
- 1 large carrot
- 1 apple
- 1 bag of peppermints (optional)
Instructions
- Process the carrots and apples using a food processor.
- Measure the steel-cut oats, flour, flaxseed, and cornstarch accurately.
- Grease the muffin tins thoroughly with cooking spray or vegetable oil.
- Combine the molasses and oats in a large mixing bowl until the oats are coated.
- Add the flour, flaxseed, and cornstarch gradually and mix until well combined.
- Incorporate the processed carrot and apple into the mixture and stir evenly.
- Preheat your oven to 350°F (175°C).
- Fill the greased muffin tins with the mixture, about three-quarters full.
- Bake the muffins for 15-20 minutes until firm and slightly golden.
- Remove from the oven and cool on a wire rack, pressing a peppermint candy into the center of each muffin while warm.
Notes
Substitutions include pears for carrots and honey or maple syrup for molasses. Consult a veterinarian if introducing new ingredients to your horse’s diet.
