Finally, stir in the melted butter (or coconut oil) until you have a perfectly silky, fluid batter.
- Rest the Batter (Recommended): While optional, chilling the batter in the refrigerator for 30 minutes allows the flour to fully absorb the liquids, relaxes the gluten, and eliminates air bubbles. This simple resting step guarantees super-soft crepes that resist tearing during flipping.
- Cook to Golden Perfection: Heat a 20 cm (8-inch) non-stick pan over medium heat and lightly grease with a touch of butter or oil. Pour a small ladle of batter into the center and immediately tilt and swirl the pan to coat the bottom evenly. Cook for about 1 minute until the edges lift slightly and the underside is lightly golden. Gently flip and cook for 1 additional minute. Transfer to a plate and repeat with the remaining batter!
