  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  4. Stir in the grated carrots, pineapple, and nuts if using.
  5. Combine the wet and dry ingredients until just mixed.
  6. Pour the batter into greased cake pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let the cakes cool before frosting.

Notes

For best results, refrigerate the cake after frosting to maintain freshness.
