Ingredients

  • 1 box chocolate cake mix, 15.25 oz (432 g), plus eggs, oil, and water as needed
  • 1/2 cup strong brewed coffee, cooled (120 ml), optional
  • 8 oz white chocolate, finely chopped (227 g)
  • 1 1/2 cups heavy whipping cream, divided (360 ml)
  • 4 oz cream cheese, softened (113 g)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 8 oz milk chocolate, finely chopped (227 g)
  • 1 cup heavy whipping cream (240 ml)
  • 1/4 cup powdered sugar (30 g)
  • 34 oz chopped dark or semisweet chocolate (85113 g)

Instructions

  1. Preheat your oven to 350°F. Grease and line two 8-inch round cake pans with parchment paper.
  2. Prepare the chocolate cake mix according to package directions. For a deeper flavor, replace 1/2 cup of water with cooled brewed coffee. Divide the batter evenly between the pans and bake for 24–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  3. Allow the cakes to cool completely. If needed, level the tops and place one layer into a tall cake ring or springform pan.
  4. To make the white chocolate mousse, melt the white chocolate with 1/2 cup of heavy cream, then let it cool. In a mixing bowl, beat the cream cheese, vanilla, and salt until smooth. Fold in the melted white chocolate and then gently mix in the whipped cream.
  5. Spread the white chocolate mousse over the first cake layer and chill for 20–30 minutes.
  6. Place the second chocolate cake layer on top.
  7. For the milk chocolate mousse, melt the milk chocolate with 1/2 cup of heavy cream and let cool. Beat the cream cheese with salt, then mix in the melted milk chocolate and fold in the whipped cream.
  8. Spread the milk chocolate mousse on top of the cake, then chill for at least 6 hours.
  9. Whip the topping cream with powdered sugar and vanilla until firm, then pipe onto the cake. Decorate with chocolate shards and serve chilled.

Notes

Use quality ingredients for the best flavor and allow sufficient chilling time for the mousse to set properly.
