- 2 tablespoons unsalted butter
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt

Instructions
- Melt the dark chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth.
- Whisk the egg yolks and sugar in a separate bowl until pale and thick.
- Fold the melted chocolate mixture into the egg yolk mixture.
- Beat the egg whites with a pinch of salt until stiff peaks form and fold into the chocolate mixture.
- Whip the cream with vanilla until soft peaks form and fold into the chocolate mixture.
- Pour the mousse into a cake pan and chill for at least 240 minutes or until set.
- Serve chilled and dust with cocoa powder.
