Ingredients

  • 2 tablespoons unsalted butter
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream

Instructions

  1. Melt the dark chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth.
  2. Whisk the egg yolks and sugar in a separate bowl until pale and thick.
  3. Fold the melted chocolate mixture into the egg yolk mixture.
  4. Beat the egg whites with a pinch of salt until stiff peaks form and fold into the chocolate mixture.
  5. Whip the cream with vanilla until soft peaks form and fold into the chocolate mixture.
  6. Pour the mousse into a cake pan and chill for at least 240 minutes or until set.
  7. Serve chilled and dust with cocoa powder.
