Description

A decadent dessert combining rich dark chocolate with light vanilla bavarois, perfect for special occasions.


Ingredients

  • 2 large eggs
  • 1/4 cup (60g) sugar
  • 2/3 cup (60g) almond flour
  • 1 tbsp (15g) melted butter
  • 3.5 oz (100g) dark chocolate (70%)
  • 1/4 cup (50ml) hot milk
  • 2/3 cup (150ml) heavy whipping cream, semi-whipped
  • 1/2 cup (100ml) whole milk
  • 1 vanilla bean
  • 2 egg yolks
  • 2 tbsp (30g) sugar
  • 2 gelatin sheets, bloomed
  • Chocolate mousse dollops
  • Vanilla cream dollops
  • Chocolate spheres
  • Chocolate décor curls
  • Cocoa powder dusting
  • Edible gold leaf

Instructions

  1. Preheat your oven to 350°F (180°C). Line a baking tray or cake ring with parchment paper.
  2. Prepare the almond sponge by whisking the eggs and sugar until pale, thick, and fluffy.
  3. Gently fold in the almond flour and melted butter until smooth and airy.
  4. Spread the mixture evenly and bake for 10–12 minutes until lightly golden and springy.
  5. Let it cool completely.
  6. Pour the hot milk over the dark chocolate and stir until glossy and smooth.
  7. Allow the ganache to cool slightly, then fold in the semi-whipped cream.
  8. Pipe or spread this chocolate mousse over the almond sponge layer and freeze for 30 minutes.
  9. Heat the milk with the vanilla bean until fragrant.
  10. Whisk egg yolks and sugar together, then gradually pour in warm vanilla milk.
  11. Return this mixture to low heat and gently cook until slightly thickened.
  12. Stir in the bloomed gelatin until fully dissolved.
  13. Fold in the semi-whipped cream carefully.
  14. Pour this vanilla bavarois over the chocolate mousse layer and smooth the top.
  15. Freeze the Chocolate Vanilla Entremets for several hours or overnight until set.
  16. Finish with dollops of chocolate mousse, vanilla cream, and decorations.

Notes

Use quality ingredients for the best flavor, and don’t rush the freezing process between layers.
