Description

A rich chocolate cake layered with cherries and cream, perfect for impressing guests and satisfying your sweet tooth.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee
  • 2 cups cherries, pitted and halved
  • 1/3 cup sugar for cherry filling
  • 1 tbsp cornstarch
  • 2 tbsp water for cherry filling
  • 3 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract for frosting
  • 2 cups dark chocolate curls or shaved chocolate for decoration
  • Whole cherries with stems for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, buttermilk, oil, and vanilla. Mix until smooth, then slowly stir in the hot coffee. The batter will be thin.
  4. Divide the batter evenly between the pans and bake for 30–35 minutes. Let the cakes cool completely.
  5. For the cherry filling, add cherries and sugar to a saucepan over medium heat. Mix cornstarch with water and stir it in. Cook until thickened and glossy, about 5 minutes. Cool completely.
  6. Beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  7. Slice each cake layer in half horizontally to create four layers.
  8. Spread whipped cream and cherry filling between each layer. Frost the outside of the cake with the remaining whipped cream.
  9. Press chocolate curls around the sides, pipe whipped cream swirls on top, and garnish with whole cherries.
  10. Chill for at least 1 hour before slicing.

Notes

Use high-quality cocoa powder for the best chocolate flavor. Allowing the cake to chill helps the flavors meld together beautifully.
