Ingredients

  • 8 ounces dark chocolate, chopped
  • 1/2 cup unsalted butter
  • 3 large eggs, separated
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • Pinch of salt

Instructions

  1. Melt the dark chocolate and butter together in a heatproof bowl over a pot of simmering water, stirring until smooth.
  2. In another bowl, whisk the egg yolks with the sugar until pale and fluffy, then stir in the melted chocolate mixture and vanilla extract.
  3. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Fold the egg whites into the chocolate mixture gently.
  4. In another bowl, whip the heavy cream until soft peaks form and then fold into the chocolate mixture.
  5. Pour the mousse into a prepared cake pan and chill in the refrigerator for at least 240 minutes or until set.
  6. Serve chilled, optionally garnished with chocolate shavings or whipped cream.

Notes

Use high-quality chocolate for the best flavor. Whip the cream to soft peaks to maintain an airy texture.
