- 8 ounces dark chocolate, chopped
- 1/2 cup unsalted butter
- 3 large eggs, separated
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- Pinch of salt
Instructions
- Melt the dark chocolate and butter together in a heatproof bowl over a pot of simmering water, stirring until smooth.
- In another bowl, whisk the egg yolks with the sugar until pale and fluffy, then stir in the melted chocolate mixture and vanilla extract.
- In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Fold the egg whites into the chocolate mixture gently.
- In another bowl, whip the heavy cream until soft peaks form and then fold into the chocolate mixture.
- Pour the mousse into a prepared cake pan and chill in the refrigerator for at least 240 minutes or until set.
- Serve chilled, optionally garnished with chocolate shavings or whipped cream.
