Ingredients

  • 6 tablespoons unsalted butter, melted
  • 24 ounces (680g) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 8 ounces (225g) dark chocolate, melted and cooled
  • ½ cup sour cream
  • 1 tablespoon unsweetened cocoa powder
  • 1 cup heavy cream
  • 8 ounces (225g) dark chocolate, finely chopped
  • 1 cup fresh raspberries
  • Fresh mint leaves for garnish
  • Powdered sugar (optional)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Combine the chocolate cookie crumbs with the melted butter until the texture resembles wet sand.
  3. Transfer the mixture into a 9-inch springform pan and press it into an even layer.
  4. Bake for 10 minutes and allow to cool completely.
  5. Melt the dark chocolate using a double boiler or microwave.
  6. In a large mixing bowl, beat the cream cheese until smooth.
  7. Add the sugar and mix until well combined.
  8. Add the eggs one at a time, stirring gently after each.
  9. Stir in the vanilla extract and sour cream.
  10. Pour in the melted chocolate and mix until incorporated.
  11. Pour the cheesecake filling over the cooled crust and tap gently to release air bubbles.
  12. Bake for 55 to 60 minutes until the edges are set.
  13. Turn off the oven and leave the cheesecake inside for one hour.
  14. Allow it to cool completely at room temperature.
  15. Chill in the refrigerator for at least four hours, preferably overnight.
  16. Heat the heavy cream and pour over chopped chocolate to make the ganache.
  17. Spread the ganache over the chilled cheesecake and top with fresh raspberries.
  18. Garnish with mint leaves and powdered sugar if desired.

Notes

For the best flavor, refrigerate overnight. Use high-quality chocolate for optimal taste.
