Description

Ingredients

  • 1 ½ lbs chicken breast
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion granules
  • 1 teaspoon Italian seasoning mix
  • ½ teaspoon paprika
  • ¼ teaspoon red chili flakes
  • 1 ½ cups chicken broth
  • 1 lb cheese tortellini
  • 1 cup mozzarella cheese, shredded
  • ½ cup heavy cream
  • 2 cups baby spinach
  • ⅓ cup Parmesan cheese, grated

Instructions

  1. Spray the slow cooker with olive oil.
  2. Arrange chicken breasts in a single layer in the bottom of the pot.
  3. Pour the marinara sauce and spices over the chicken, ensuring everything is well coated.
  4. Cover the slow cooker and set it to LOW for about 240 minutes.
  5. Once cooked, shred the chicken using two forks and stir it back into the sauce.
  6. Add the tortellini, mozzarella, and heavy cream to the cooker, mixing everything together well.
  7. Cook on LOW for another 30 minutes.
  8. Stir in the baby spinach and cook for an additional 10 minutes, until the spinach is wilted.
  9. Finally, sprinkle in the Parmesan cheese, taste, and adjust the seasoning as needed.

Notes

Make sure to cut the chicken into even pieces to ensure uniform cooking. You can mix in other vegetables like bell peppers or mushrooms for added flavor.
