Description

Delicious and healthy fries made from zucchini, coated in a crispy Parmesan-panko mixture, perfect as an appetizer or side dish.


Ingredients

  • 23 medium zucchini
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 2 tbsp all-purpose flour
  • 12 tbsp fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the zucchini into fries.
  3. In a bowl, mix the panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
  4. In another bowl, whisk the eggs. Place the flour in a third bowl.
  5. Dredge each zucchini slice in flour, dip in the egg, and then coat with the breadcrumb mixture.
  6. Arrange the coated zucchini fries on the baking sheet.
  7. Bake for 20-25 minutes until golden and crispy.
  8. Garnish with fresh parsley before serving.

Notes

For extra crispy fries, slice zucchini evenly and do not overcrowd the baking sheet.
