A delightful mix of tender chicken, crispy vegetables, and creamy peanut dressing.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup edamame, shelled
  • 2 cups mixed salad greens
  • 1 cup red cabbage, shredded
  • 1 cup carrots, grated
  • 1 bell pepper, chopped
  • 1/4 cup green onions, chopped
  • 1/4 cup sesame seeds
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix together the salad greens, edamame, red cabbage, carrots, bell pepper, green onions, and shredded chicken.
  2. In another bowl, whisk the peanut butter, soy sauce, honey, rice vinegar, sesame oil, salt, and pepper until smooth.
  3. Drizzle the peanut dressing over the salad and toss everything to coat well.
  4. Sprinkle the sesame seeds on top before serving.
  5. Enjoy immediately or chill in the fridge for meal prep.

Notes

Use rotisserie chicken for quicker prep. You can add red pepper flakes to the dressing for spice.
