Ingredients

  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 3 large egg yolks
  • 1/2 cup granulated sugar
  • 1 packet unflavored gelatin
  • 1/4 cup water
  • 1 teaspoon lemon juice
  • 1 pre-made sponge cake or ladyfingers (for base)

Instructions

  1. Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  2. Whisk together egg yolks and granulated sugar until pale and creamy.
  3. Dissolve gelatin in water and add it to the egg mixture. Heat gently to combine.
  4. Add lemon juice and mix well.
  5. Fold the whipped cream into the egg mixture gently until fully combined.
  6. Place the sponge cake or ladyfingers in a serving dish and pour the mousse over the top.
  7. Chill in the refrigerator for at least 240 minutes or until set.
  8. Serve chilled, garnished with additional whipped cream or berries if desired.

Notes

Store the cake in an airtight container in the refrigerator for up to three days. Customize flavors by adding almond or orange zest.
