  • 1/4 cup chia seeds
  • Zest of 1 large lemon

  • 12 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • 1/4 cup Greek yogurt or coconut yogurt for extra creaminess
  • Lemon zest curls, for garnish

Instructions

  1. Whisk together the milk, lemon juice, lemon zest, maple syrup, vanilla extract, and yogurt until smooth and creamy.
  2. Stir in the chia seeds and whisk well to prevent clumping.
  3. Let the mixture sit for 5 minutes, then whisk again to evenly distribute the chia seeds.
  4. Cover and refrigerate for at least 4 hours or overnight until thick and creamy.
  5. Stir before serving and spoon into small jars or dessert cups.
  6. Top with fresh lemon zest curls or a drizzle of honey.
