Ingredients

  • 20 oz cheese tortellini
  • 1 lb steak (sirloin or ribeye)
  • Salt
  • Black pepper
  • Garlic powder
  • Smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups Parmesan, shredded or freshly grated
  • Parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Cracked black pepper (optional garnish)

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. Season the steak with salt, black pepper, garlic powder, and smoked paprika on both sides.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the steak and sear for about 4-5 minutes on each side or until it reaches your desired doneness. Remove the steak from the skillet and let it rest before slicing into strips.
  4. Reduce the heat to medium, add the butter to the same skillet. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant.
  5. Pour in the heavy cream and milk, stirring to combine. Let it simmer gently for about 3-4 minutes.
  6. Stir in the Parmesan cheese until melted and smooth. Adjust the thickness by adding more milk if needed.
  7. Add the cooked tortellini to the skillet, tossing to coat in the creamy sauce. Then, add the sliced steak on top and mix gently.
  8. Serve hot, garnished with chopped parsley, red pepper flakes, and cracked black pepper if desired.

Notes

Use freshly grated Parmesan for the best flavor. Letting the steak rest is key to keeping it tender.
