Description

A savory twist on traditional crème brûlée, combining rich crab meat with creamy custard and a caramelized sugar crust.


Ingredients

Scale
  • 1 cup fresh crab meat
  • 4 egg yolks
  • 1 cup heavy cream
  • ¼ cup sugar
  • Salt and pepper to taste
  • Optional: pickled ginger, garlic, grated Parmesan

Instructions

  1. Separate the egg yolks from the whites.
  2. Whisk together the egg yolks and cream.
  3. Add a pinch of salt and pepper.
  4. Strain the custard mixture for smoothness.
  5. Distribute the crab meat evenly in ramekins.
  6. Pour the custard over the crab in the ramekins.
  7. Prepare a water bath and place the ramekins in it.
  8. Bake at 325°F for 30-35 minutes.
  9. Cool to room temperature, then chill in the fridge.
  10. Sprinkle sugar on top and caramelize with a kitchen torch.

Notes

Serve immediately after caramelizing the sugar for the best texture contrast.
