Ingredients

- 1 cup fresh crab meat
- 4 egg yolks
- 1 cup heavy cream
- ¼ cup sugar
- Salt and pepper to taste
- Optional: pickled ginger, garlic, grated Parmesan
Instructions
- Separate the egg yolks from the whites.
- Whisk together the egg yolks and cream.
- Add a pinch of salt and pepper.
- Strain the custard mixture for smoothness.
- Distribute the crab meat evenly in ramekins.
- Pour the custard over the crab in the ramekins.
- Prepare a water bath and place the ramekins in it.
- Bake at 325°F for 30-35 minutes.
- Cool to room temperature, then chill in the fridge.
- Sprinkle sugar on top and caramelize with a kitchen torch.
Notes
Serve immediately after caramelizing the sugar for the best texture contrast.
