- 1 cup cottage cheese (full-fat or low-fat)
- 1 large egg
- ½ cup shredded cheddar cheese (or parmesan/mozzarella)
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp smoked paprika
- Salt & black pepper to taste
- Optional: dried parsley, chili flakes, everything bagel seasoning
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Blend the mixture: In a blender, combine the cottage cheese, egg, cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Blend until mostly smooth but still slightly textured.
- Scoop into chips: Use a spoon to drop small mounds (about 1–2 tablespoons) onto the baking sheet. Flatten each mound into a thin circle— the thinner they are, the crispier they will be.
- Bake: Place the tray in the oven and bake for 20–30 minutes depending on how crispy you want them. For softer chips, aim for around 20 minutes; for extra crispy, bake for 28–30 minutes.
- Cool completely: Let them cool on the tray for about 10 minutes. They will continue to crisp up as they cool.
- Serve: Enjoy them on their own or with a dip like salsa or guacamole.
Notes
Store in an airtight container. Best enjoyed on the day they are made, but can be kept for 2-3 days at room temperature.
