- 2 cups crushed chocolate chip cookies
- ½ cup melted butter
- 1 cup all-purpose flour (heat-treated)
- ½ cup unsalted butter (softened)
- ½ cup brown sugar
- ¼ cup granulated sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- ½ cup mini chocolate chips
- 16 oz cream cheese (softened)
- ¾ cup granulated sugar
- 3 large eggs
- ½ cup sour cream
- 1 teaspoon vanilla extract
- ½ cup mini chocolate chips
- Optional toppings: whipped cream, chocolate ganache, extra cookie dough pieces, chocolate chips
Instructions
- Preheat your oven to 325°F (165°C). In a mixing bowl, combine the crushed cookies with melted butter. Press this mixture firmly into the bottom of a springform pan and bake for 10 minutes. Let it cool completely.
- Heat-treat the flour by baking at 350°F (175°C) for 5 minutes. In another bowl, mix together the softened butter, brown sugar, and granulated sugar until well combined. Add the milk and vanilla extract. Stir in the heat-treated flour until smooth, then fold in the mini chocolate chips. Roll the mixture into small balls and refrigerate.
- Beat the cream cheese and sugar in a large mixing bowl until nice and smooth. Gradually add the eggs, mixing gently after each addition. Next, fold in the sour cream and vanilla extract, followed by the mini chocolate chips and reserved cookie dough pieces.
- Pour the cheesecake batter over the cooled crust, smoothing the top for even baking.
- Bake the cheesecake for approximately 55-65 minutes. The center should still be slightly jiggly. After baking, turn off the oven and keep the cheesecake inside for an additional hour with the door slightly ajar.
- Refrigerate the cheesecake for at least 4 hours, or overnight for best results.
- Before serving, add your choice of toppings, like whipped cream, chocolate ganache, extra cookie dough pieces, and chocolate chips.

Room temperature ingredients are essential for a smooth texture. Avoid overmixing after adding eggs to prevent a dense cheesecake.
