Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 pound ground meat (beef, turkey, or plant-based)
  • 4 cups beef or vegetable broth
  • 2 cups potatoes, cubed
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup green beans, chopped
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, celery, and garlic, and sauté until softened, about 5-7 minutes.
  2. Add the ground meat and cook until browned. Drain excess fat if necessary.
  3. Stir in the broth, potatoes, diced tomatoes, green beans, thyme, salt, and pepper. Bring to a boil, then reduce to a simmer.
  4. Cover and cook for about 20-30 minutes, or until the vegetables are tender.
  5. Taste and adjust seasoning as needed.
  6. Serve hot with crusty bread or salad.
