- 1 onion, chopped
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 pound ground meat (beef, turkey, or plant-based)
- 4 cups beef or vegetable broth
- 2 cups potatoes, cubed
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup green beans, chopped
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, celery, and garlic, and sauté until softened, about 5-7 minutes.
- Add the ground meat and cook until browned. Drain excess fat if necessary.
- Stir in the broth, potatoes, diced tomatoes, green beans, thyme, salt, and pepper. Bring to a boil, then reduce to a simmer.
- Cover and cook for about 20-30 minutes, or until the vegetables are tender.
- Taste and adjust seasoning as needed.
- Serve hot with crusty bread or salad.
