Ingredients

  • 2⅔ cups (320 g) all-purpose flour
  • ¾ cup (80 g) hazelnut flour
  • 1¼ cups (150 g) granulated sugar
  • 1 cup (120 g) cold unsalted butter, cubed
  • ¼ cup (30 g) unsweetened cocoa powder
  • 2 teaspoons baking powder (8 g)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1⅔ cups (400 ml) whole milk
  • ¾ cup (150 g) granulated sugar (for filling)
  • ⅓ cup (40 g) cornstarch
  • 4 egg yolks
  • 1 teaspoon instant coffee granules
  • ½ cup (70 g) dark chocolate chips

Instructions

  1. Beat the egg yolks with the sugar in a medium bowl until light and creamy.
  2. Mix in the cornstarch until smooth.
  3. Heat the milk in a saucepan with the vanilla and instant coffee until hot but not boiling.
  4. Stir until the coffee dissolves completely.
  5. Gradually whisk the warm milk into the egg mixture.
  6. Return everything to the saucepan and cook over medium heat, stirring constantly, until thick and creamy.
  7. Transfer the coffee custard to a shallow bowl, press plastic wrap directly onto the surface, and let it cool completely.
  8. Preheat your oven to 350°F (180°C).
  9. Grease and line a 9-inch springform pan with parchment paper.
  10. Combine the flour, hazelnut flour, sugar, cocoa powder, baking powder, butter, eggs, vanilla, and salt in a food processor.
  11. Pulse just until coarse crumbs form.
  12. Press about half of the crumb mixture evenly into the bottom of the prepared pan.
  13. Spread the cooled coffee cream over the crust.
  14. Sprinkle the dark chocolate chips evenly over the filling.
  15. Cover with the remaining chocolate crumble without pressing it down.
  16. Bake for 45 minutes, or until the top is set and lightly crisp.
  17. Let it cool completely at room temperature, then refrigerate for at least 2 hours before slicing.
  18. Serve chilled with a dusting of cocoa powder or a dollop of whipped cream.
