- 1 cup Coconut Milk
- 1 cup Heavy Cream
- 8 ounces White Chocolate (Chopped)
- 3 Large Eggs (Separated)
- 1/4 cup Granulated Sugar
- 1/2 teaspoon Vanilla Extract
- 1/4 teaspoon Salt
- 1 cup Shredded Coconut
- 1 layer Pre-Baked Cake (Optional)
Instructions
- Pour the coconut milk into your saucepan and place it over medium heat. Bring it to the verge of boiling, then remove from heat.
- Drop the chopped white chocolate into the hot coconut milk and stir until melted and smooth.
- Combine egg yolks and sugar in a bowl and beat until pale and thickened.
- Slowly pour in the white chocolate mixture into the egg yolks, whisking constantly.
- Add the vanilla extract and mix until combined.
- Beat the heavy cream in a chilled bowl until soft peaks form.
- Fold the whipped cream into the chocolate mixture until just combined.
- Whip the egg whites with salt until stiff peaks form.
- Gently fold the whipped egg whites into the mixture.
- Sprinkle shredded coconut into the mousse and fold gently.
- Pour the mousse over the pre-baked cake or into individual servings.
- Cover and chill in the refrigerator for at least 4 hours.
Notes
Use high-quality white chocolate for the best results. Optionally toast the coconut for enhanced flavor.
