- 1 cup coconut cream
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package of sponge cake or ladyfingers
- Fresh mint leaves for garnish
Instructions
- Whip the coconut cream until it forms soft peaks.
- Gradually add in the powdered sugar and vanilla extract, continuing to whip until well combined.
- Layer the sponge cake or ladyfingers at the bottom of a serving dish.
- Spread half of the coconut cream mixture over the cake layers.
- Add a layer of mixed berries on top of the cream.
- Repeat the process with the remaining cake, cream, and berries.
- Finish with a dollop of cream and garnish with fresh mint leaves.
- Chill in the refrigerator for at least 60 minutes before serving.
Notes
For added texture, sprinkle some toasted coconut on top before serving.
