Description

A delightful dessert featuring whipped coconut cream and fresh mixed berries, perfect for any occasion.


Ingredients

  • 1 cup coconut cream
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package of sponge cake or ladyfingers
  • Fresh mint leaves for garnish

Instructions

  1. Whip the coconut cream until it forms soft peaks.
  2. Gradually add in the powdered sugar and vanilla extract, continuing to whip until well combined.
  3. Layer the sponge cake or ladyfingers at the bottom of a serving dish.
  4. Spread half of the coconut cream mixture over the cake layers.
  5. Add a layer of mixed berries on top of the cream.
  6. Repeat the process with the remaining cake, cream, and berries.
  7. Finish with a dollop of cream and garnish with fresh mint leaves.
  8. Chill in the refrigerator for at least 60 minutes before serving.

Notes

For added texture, sprinkle some toasted coconut on top before serving.
