Instructions
- Prepare the Cake Batter: Cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and almond extracts.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually alternate the dry ingredients with the milk or coconut milk. Mix until smooth and fully combined; do not overmix.
- Bake the Cake: Pour the batter into prepared cake pans and bake until golden and set. Allow to cool completely before frosting.
- Prepare the Frosting: Beat butter until creamy. Gradually add powdered sugar and mix in vanilla and cream cheese or whipped cream until smooth.
- Assemble the Cake: Place the first layer on a plate and spread frosting, then add the second layer, continuing to frost the top and sides.
- Add the Coconut Coating: Gently press shredded coconut around the sides.
- Decorate the Top: Pipe whipped frosting swirls on top, sprinkle toasted almonds, and add edible flowers if desired.
