Description
A heritage quick bread that delivers an incredibly moist and tender crumb laced with aromatic ribbons of caramelized cinnamon sugar, topped with a sweet, crackly crust.
Ingredients
Scale
- 4 cups all-purpose flour, sifted
- 2 cups granulated white sugar
- 2 tablespoons baking powder
- ½ teaspoon fine sea salt
- 2 cups whole milk, room temperature
- 2 large eggs, room temperature
- ⅔ cup vegetable oil or unsalted butter, melted and cooled
- 2 teaspoons pure vanilla extract
- ⅔ cup granulated white sugar (or brown sugar for richer flavor)
- 2 tablespoons ground cinnamon
Instructions
- Preheat your oven to 175°C (350°F).
- Grease two loaf pans thoroughly with softened butter or non-stick baking spray.
- Whisk together the flour, sugar, baking powder, and salt in a large mixing bowl.
- In a separate bowl, whisk together the milk, eggs, oil (or butter), and vanilla extract.
- Pour the wet ingredients into the dry mixture and gently fold until just combined.
- Blend the cinnamon-sugar topping in a small bowl.
- Divide half of the batter equally into the prepared loaf pans and smooth gently.
- Sprinkle half of the cinnamon-sugar mixture over the batter in each pan.
- Carefully spoon the remaining batter over the cinnamon layer in both pans.
- Dust the top with the remaining cinnamon-sugar mixture.
- Swirl using a butter knife to create patterns without overmixing.
- Bake for 45 to 50 minutes until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Allow the bread to cool before slicing to maintain the crumb structure. Optional: Fold in ½ cup of chopped toasted nuts for added texture.
