Ingredients

  • 2 cups granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup whole milk
  • 1 tbsp vanilla extract
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 tsp vanilla extract
  • 1/2 cup white chocolate chips
  • 1/4 cup heavy cream
  • 2 tbsp orange marmalade
  • Fresh strawberries
  • Fresh cherries
  • Mandarin orange slices
  • Blueberries
  • Fresh mint leaves
  • Gold sanding sugar or cake crumbs for the base

Instructions

  1. Preheat your oven to 350°F. Grease and line two 8-inch cake pans with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Add in the softened butter, eggs, milk, and vanilla extract, beating until smooth and fluffy.
  4. Divide the batter evenly between the prepared pans and bake for 28–32 minutes, or until a toothpick comes out clean.
  5. Allow the cakes to cool completely before frosting.
  6. Beat the cream cheese until smooth; add powdered sugar and vanilla, then fold in the whipped cream until fluffy.
  7. Frost between the cake layers and around the outside for a smooth finish.
  8. Chill the cake for 20 minutes before adding the drip.
  9. Heat the heavy cream until steaming, pour over the white chocolate chips, and stir until smooth.
  10. Add orange marmalade for a glossy citrus-flavored drip.
  11. Spoon the drip around the edges, allowing drips to fall down the sides.
  12. Pipe whipped frosting swirls around the top, and decorate with fruits and mint.
  13. Chill briefly before slicing for clean layers.

Notes

Use softened butter and cream cheese for easy blending. Arrange fruit decorations just before serving.
