- 1 Large Egg

- 1 teaspoon Ground Cinnamon
- ½ teaspoon Baking Soda
- ¼ teaspoon Salt
Instructions
- Whip the Cheesecake Core: In a medium-sized mixing bowl, combine cream cheese, powdered sugar, and vanilla extract. Beat until smooth.
- Form the Cookie Dough Base: Preheat oven to 350°F (175°C). In a larger bowl, combine softened butter and brown sugar, then beat until fluffy. Add the egg and mix. In a third bowl, whisk together the flour, cinnamon, baking soda, and salt. Gradually add dry mixture to wet ingredients.
- Scoop out 1 tablespoon of cookie dough, press flat, and add a teaspoon of cheesecake filling. Bring the edges together to seal.
- Bake, Set, and Serve: Place on a parchment-lined baking sheet and bake for 12 to 15 minutes. Let cool slightly before transferring to a wire rack.
