- 1 cup of butter, softened
- 1 cup of sugar
- 1 cup of brown sugar
- 2 large eggs
- 2 teaspoons of vanilla extract
- 4 cups of all-purpose flour
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 teaspoon of cinnamon
- 8 oz cream cheese, softened
- 1/4 cup of powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, sugar, and brown sugar until fluffy.
- Beat in the eggs, one at a time, and then add the vanilla extract.
- Whisk together the flour, baking soda, salt, and cinnamon in another bowl.
- Gradually add the dry ingredients to the wet mixture until combined.
- Mix the softened cream cheese and powdered sugar until smooth in a separate bowl.
- Take a tablespoon of cookie dough and flatten it in your palm. Place a small amount of cheesecake mixture in the center and fold the cookie dough over it, sealing it.
- Roll the dough into a ball and place it on the lined baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool for a few minutes on the baking sheet before transferring them to a wire rack.

Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
