Description

  • 0.25 cup Unsalted Butter (melted)
  • 24 oz Cream Cheese (softened)

  • 1 cup Sour Cream
  • 0.5 cup Heavy Cream
  • 1 cup Fresh Strawberries (chopped finely)
  • 4 oz Semi-Sweet Chocolate (melted & cooled slightly)
  • 0.5 cup Strawberry Jam (warmed slightly)
  • Optional: Additional fresh whole or sliced strawberries for decoration

Instructions

  1. Press and set the cookie crust: Preheat your oven to 325°F (163°C). In a medium bowl, stir the chocolate cookie crumbs and melted butter together until the mixture feels like wet sand. Press the crumbs firmly into the bottom of a 9-inch springform pan to form an even, compact layer.
  2. Whip the decadent cream filling: In a large bowl, beat the softened cream cheese and granulated sugar together on medium speed until smooth and free of lumps. Mix in the vanilla extract, then add the eggs one at a time, mixing on low just until combined. Gently stir in the sour cream and heavy cream until completely smooth.
  3. Fold the chocolate and berries: Gently fold your finely chopped fresh strawberries into the cream cheese batter. Slowly drizzle in the melted, cooled semi-sweet chocolate, swirling it gently with a spatula to create a beautiful marbled pattern throughout the mixture.
  4. Bake until gently set: Pour the marbled batter evenly over your prepared chocolate crust. Bake for 55 to 60 minutes until the edges are firm and lightly browned, but the center still has a slight, uniform jiggle. Turn off the oven and let it cool completely at room temperature.
  5. Chill, glaze, and garnish: Once at room temperature, place the cheesecake into the refrigerator to chill for at least 4 hours (preferably overnight). Before serving, slide a knife around the rim, open the springform hinge, spread the strawberry jam smoothly across the top, and garnish generously with fresh strawberries.

Notes

To store, cover loosely with plastic wrap or place inside an airtight container in the refrigerator for up to 4 days. For clean cuts, dip a knife in hot water before slicing.
