Description

A delightful blend of rich chocolate and tender pistachio, this Chocolate Pistachio Loaf features beautiful swirls, moist texture, and a luscious chocolate ganache topping.

Ingredients

Scale
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 (3.4-ounce) box instant pistachio pudding mix
  • 1 teaspoon table salt
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 cup buttermilk
  • 2 tablespoons dark cocoa powder
  • 4 teaspoons strong brewed coffee
  • ½ cup dark chocolate chips
  • ¼ cup heavy cream
  • 2 tablespoons chopped pistachios

Instructions

  1. Preheat your oven to 350°F. Generously spray a 9×5-inch metal loaf pan with nonstick baking spray and sprinkle with granulated sugar.
  2. Mix the granulated sugar and vegetable oil in a large mixing bowl until combined. Add the eggs, vanilla extract, and almond extract, mixing until well incorporated.
  3. Whisk together the all-purpose flour, pistachio pudding mix, salt, baking powder, and baking soda in a separate bowl until evenly distributed.
  4. Combine the dry ingredients with the sugar and oil mixture, alternating with the buttermilk, mixing gently until just incorporated.
  5. Measure ¾ cup of the pistachio batter and transfer it to another bowl. In another bowl, stir together dark cocoa powder and brewed coffee until smooth.
  6. Add the cocoa-coffee mixture to the reserved batter, stirring until smooth.
  7. Spoon approximately one-third of the pistachio batter into the prepared loaf pan and gently spread it out. Top with dollops of chocolate batter.
  8. Use a knife to gently swirl the batters together. Repeat layering the remaining batter in the same pattern.
  9. Bake in the center of the preheated oven for 57–58 minutes, checking for doneness with a skewer.
  10. Let the loaf cool in the pan for 10–15 minutes before transferring it to a wire rack to cool completely.
  11. Microwave dark chocolate chips and heavy cream for 45 seconds, stirring until smooth to make the ganache. Spread over the cooled loaf and sprinkle with chopped pistachios.

Notes

Use a metal loaf pan for even baking and avoid overmixing to prevent a dense loaf. Allow the loaf to cool completely before adding ganache for best results.
