Description

A rich and airy chocolate mousse cake that is perfect for special occasions or a delicious treat any time.


Ingredients

  • 1 cup dark chocolate, chopped
  • 4 tablespoons unsalted butter
  • 3 large eggs, separated
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. Melt the chocolate and butter together in a double boiler, stirring until smooth. Remove from heat and let cool slightly.
  3. Beat the egg yolks with the sugar until thick and pale. Stir in the melted chocolate and vanilla.
  4. Beat the egg whites with a pinch of salt until stiff peaks form. Fold the egg whites into the chocolate mixture.
  5. Whip the heavy cream to soft peaks and then fold it into the mixture.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes or until the cake has set but is still slightly jiggy in the center.
  8. Let cool, then refrigerate for at least 4 hours before serving.

Notes

Use high-quality dark chocolate for the best flavor. Ensure mixing bowls are clean and dry when whipping egg whites. Store in the refrigerator for 3-4 days.
