- 1 cup dark chocolate, chopped
- 4 tablespoons unsalted butter
- 3 large eggs, separated
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- Melt the chocolate and butter together in a double boiler, stirring until smooth. Remove from heat and let cool slightly.
- Beat the egg yolks with the sugar until thick and pale. Stir in the melted chocolate and vanilla.
- Beat the egg whites with a pinch of salt until stiff peaks form. Fold the egg whites into the chocolate mixture.
- Whip the heavy cream to soft peaks and then fold it into the mixture.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until the cake has set but is still slightly jiggy in the center.
- Let cool, then refrigerate for at least 4 hours before serving.
Notes
Use high-quality dark chocolate for the best flavor. Ensure mixing bowls are clean and dry when whipping egg whites. Store in the refrigerator for 3-4 days.
