- 1 cup dark chocolate, chopped
- 4 tablespoons unsalted butter
- 3 large eggs, separated
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- Pinch of salt
- Cocoa powder (for dusting, optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a cake pan.
- Melt the dark chocolate and butter together in a double boiler or microwave. Allow to cool slightly.
- In a large bowl, whisk the egg yolks, sugar, and vanilla until creamy. Stir in the chocolate mixture.
- In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture.
- In another bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until fully combined.
- Pour the mixture into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes until set but still slightly soft in the center.
- Allow to cool completely before removing from the pan.
- Dust with cocoa powder before serving, if desired.

Store in an airtight container in the refrigerator for up to three days.
