Delicious chocolate and peanut butter bites that are easy to make and perfect for satisfying sweet cravings.


Ingredients

  • 1 cup creamy peanut butter
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream
  • 16 chocolate sandwich cookies
  • 1/2 cup mini chocolate candies
  • 2 tbsp mini chocolate chips
  • Powdered sugar for dusting
  • Crushed cookies (optional)
  • Flaky sea salt (optional)

Instructions

  1. In a large bowl, beat together the peanut butter and cream cheese until smooth and fluffy.
  2. Add powdered sugar and vanilla extract, mixing until thick and creamy.
  3. Pour in the heavy cream one tablespoon at a time until the filling becomes light, silky, and pipeable.
  4. Fold in a few mini chocolate candies and mini chocolate chips for extra crunch and color.
  5. Spoon or pipe a thick layer of peanut butter filling onto the bottom side of 8 chocolate sandwich cookies.
  6. Top with the remaining cookies and gently press to create giant cookie sandwich bites.
  7. Decorate the tops with extra chocolate candies, crushed cookies, and a light dusting of powdered sugar.
  8. Chill the Chocolate Cookie Peanut Butter Bites for 20-30 minutes before serving.

Notes

Chill the mixture for easier handling. Experiment with toppings for added fun.
