Ingredients

  • 1 1/2 tsp baking soda

  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup heavy cream
  • 1 tbsp butter
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 2 tbsp cocoa powder
  • Chocolate brownie bites
  • Chocolate bar pieces
  • Chocolate cookie crumbs
  • Powdered sugar for dusting
  • Fresh mint leaves (optional)

Instructions

  1. Preheat your oven to 350°F. Grease and line an 8-inch round cake pan.
  2. Whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Add eggs, buttermilk, oil, and vanilla extract. Mix until smooth.
  4. Slowly pour in the hot coffee, mixing to achieve a moist texture.
  5. Pour the batter into the prepared pan and bake for 40–45 minutes, or until a toothpick comes out mostly clean.
  6. Let the cake cool completely before adding the ganache.
  7. Heat the heavy cream until steaming, then pour it over chocolate chips and butter.
  8. Let sit for 2 minutes, then stir until glossy and smooth.
  9. Pour ganache over the cake, allowing it to drip down the sides.
  10. Beat whipping cream, powdered sugar, cocoa powder, and vanilla until thick and fluffy.
  11. Pipe or spoon swirls on top, then decorate with brownie chunks, chocolate pieces, and cookie crumbs.
  12. Chill before serving for a thick, fudgy ganache.

Notes

For a richer flavor, substitute brewed coffee with espresso. Ensure all ingredients are at room temperature for better mixing.
