Description

A classic Italian-American dish featuring crispy breaded chicken topped with marinara sauce and melted cheese.


Ingredients

  • 4 chicken breasts
  • 1 cup Italian-style breadcrumbs
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • 1 cup flour
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste

Instructions

  1. Slice the chicken breasts in half horizontally to create thinner cutlets.
  2. Pound the chicken between plastic wrap until it reaches 1/4-inch thickness.
  3. Season the chicken with salt, pepper, and garlic powder.
  4. Prepare three shallow bowls: one with beaten eggs, one with a mixture of breadcrumbs and Parmesan, and one with flour.
  5. Dredge the chicken in flour, dip it into the eggs, and coat it with the breadcrumb mixture.
  6. Heat oil in a skillet and fry the chicken until golden brown, about 4-5 minutes per side.
  7. Preheat oven to 425°F.
  8. Spread a layer of marinara sauce in a baking dish and place the fried chicken on top.
  9. Add more marinara sauce over the chicken and sprinkle with mozzarella and Parmesan cheese.
  10. Bake for 15-20 minutes or until the cheese is bubbly and melted.
  11. Garnish with fresh basil or parsley before serving.

Notes

For a healthier version, skip frying and bake the breaded chicken. Pair with spaghetti or garlic bread.
