- 4 chicken breasts
- 1 cup Italian-style breadcrumbs
- 1 cup panko breadcrumbs
- 2 eggs, beaten
- 1 cup flour
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt, to taste
- Pepper, to taste
- Garlic powder, to taste
Instructions
- Slice the chicken breasts in half horizontally to create thinner cutlets.
- Pound the chicken between plastic wrap until it reaches 1/4-inch thickness.
- Season the chicken with salt, pepper, and garlic powder.
- Prepare three shallow bowls: one with beaten eggs, one with a mixture of breadcrumbs and Parmesan, and one with flour.
- Dredge the chicken in flour, dip it into the eggs, and coat it with the breadcrumb mixture.
- Heat oil in a skillet and fry the chicken until golden brown, about 4-5 minutes per side.
- Preheat oven to 425°F.
- Spread a layer of marinara sauce in a baking dish and place the fried chicken on top.
- Add more marinara sauce over the chicken and sprinkle with mozzarella and Parmesan cheese.
- Bake for 15-20 minutes or until the cheese is bubbly and melted.
- Garnish with fresh basil or parsley before serving.
Notes
For a healthier version, skip frying and bake the breaded chicken. Pair with spaghetti or garlic bread.
