Description

A delightful dessert combining chewy chocolate chip cookies with a creamy cheesecake filling.


Ingredients

  • 1 cup (8 oz) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup (170g) unsalted butter, melted and slightly cooled
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups semisweet or milk chocolate chips

Instructions

  1. In a medium mixing bowl, combine softened cream cheese, granulated sugar, and vanilla extract. Beat until the mixture is smooth and creamy.
  2. Scoop out about 1 teaspoon of this filling and place it onto a parchment-lined baking sheet. Freeze for about 30 minutes until firm.
  3. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until it’s smooth and glossy.
  4. Add the eggs one at a time, whisking well after each addition, then stir in the vanilla extract.
  5. In a separate bowl, sift together the flour, baking soda, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing with a spatula until just combined.
  7. Fold in the chocolate chips until they are evenly distributed.
  8. Scoop out about 2 tablespoons of cookie dough, flatten it, and place one frozen cheesecake ball in the center, covering it with another tablespoon of dough.
  9. Seal the edges and roll the dough into a ball, placing it on a parchment-lined baking sheet.
  10. Refrigerate the assembled cookie dough balls for 30 minutes.
  11. Preheat the oven to 350°F (175°C).
  12. Bake the cookies for 12–15 minutes until the edges are golden brown and the centers are slightly soft.
  13. Let them cool on the baking sheet for 10 minutes before transferring to a wire rack.
  14. Enjoy the cookies warm or refrigerate them for a firmer, cheesecake-like bite.

Notes

For an alternate flavor, consider adding cocoa powder to the cheesecake filling or experimenting with different types of chocolate chips.
