- 1 cup (8 oz) cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 3/4 cup (170g) unsalted butter, melted and slightly cooled
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups semisweet or milk chocolate chips
Instructions
- In a medium mixing bowl, combine softened cream cheese, granulated sugar, and vanilla extract. Beat until the mixture is smooth and creamy.
- Scoop out about 1 teaspoon of this filling and place it onto a parchment-lined baking sheet. Freeze for about 30 minutes until firm.
- In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until it’s smooth and glossy.
- Add the eggs one at a time, whisking well after each addition, then stir in the vanilla extract.
- In a separate bowl, sift together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing with a spatula until just combined.
- Fold in the chocolate chips until they are evenly distributed.
- Scoop out about 2 tablespoons of cookie dough, flatten it, and place one frozen cheesecake ball in the center, covering it with another tablespoon of dough.
- Seal the edges and roll the dough into a ball, placing it on a parchment-lined baking sheet.
- Refrigerate the assembled cookie dough balls for 30 minutes.
- Preheat the oven to 350°F (175°C).
- Bake the cookies for 12–15 minutes until the edges are golden brown and the centers are slightly soft.
- Let them cool on the baking sheet for 10 minutes before transferring to a wire rack.
- Enjoy the cookies warm or refrigerate them for a firmer, cheesecake-like bite.
Notes
For an alternate flavor, consider adding cocoa powder to the cheesecake filling or experimenting with different types of chocolate chips.
