Ingredients

  • 1 lb fresh shrimp, deveined
  • 2 ripe, red tomatoes, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup ketchup
  • 1/4 cup freshly squeezed lime juice
  • 2 tbsp extra virgin olive oil
  • Optional: diced avocado, diced mango, minced jalapeños

Instructions

  1. Fill a large pot with water and add a pinch of salt. Bring to a boil.
  2. Add the shrimp and cook for about 2-3 minutes until pink.
  3. Remove the shrimp and place them in an ice bath to halt cooking.
  4. Dice tomatoes, chop red onions, and cilantro into even-sized pieces.
  5. In a mixing bowl, whisk together ketchup, lime juice, olive oil, and optional hot sauce.
  6. Add cooled shrimp to the bowl with chopped vegetables and mix gently.
  7. Chill in the refrigerator for at least 30 minutes before serving.
  8. Serve in individual glasses, garnished with lime wedges or avocado slices.
