- 1 lb fresh shrimp, deveined
- 2 ripe, red tomatoes, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup ketchup
- 1/4 cup freshly squeezed lime juice
- 2 tbsp extra virgin olive oil
- Optional: diced avocado, diced mango, minced jalapeños
Instructions
- Fill a large pot with water and add a pinch of salt. Bring to a boil.
- Add the shrimp and cook for about 2-3 minutes until pink.
- Remove the shrimp and place them in an ice bath to halt cooking.
- Dice tomatoes, chop red onions, and cilantro into even-sized pieces.
- In a mixing bowl, whisk together ketchup, lime juice, olive oil, and optional hot sauce.
- Add cooled shrimp to the bowl with chopped vegetables and mix gently.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve in individual glasses, garnished with lime wedges or avocado slices.
Notes
For added flavor, incorporate diced avocado or tropical fruits like mango. Balance flavors to your liking.
