Description

Ingredients

  • 1 whole chicken (about 45 lbs)
  • 8 cups of chicken broth (preferably homemade)
  • 3 large carrots, peeled and diced
  • 3 celery stalks, diced
  • 1 large onion, diced
  • 2 cups of ditalini pasta
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • 1 bay leaf

Instructions

  1. Prepare the Chicken: Start by cooking the chicken. Place the whole chicken in a large pot and cover it with water. Bring to a boil, then reduce the heat and simmer for about 90 minutes, until the chicken is fully cooked and tender. Remove the chicken from the pot and let it cool. Once cooled, shred the chicken into bite-sized pieces and set aside. Strain the broth and reserve it for the soup.
  2. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onions, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for another minute.
  3. Combine Ingredients: Add the shredded chicken, reserved chicken broth, and bay leaf to the pot. Bring the mixture to a simmer and cook for about 20 minutes to allow the flavors to meld.
  4. Cook the Pasta: In a separate pot, cook the ditalini pasta according to the package instructions. Drain and set aside.
  5. Finish the Soup: Add the cooked pasta to the soup and stir to combine. Season with salt and pepper to taste. Remove the bay leaf before serving.
  6. Serve: Ladle the soup into bowls and garnish with fresh parsley. Serve hot with a side of crusty bread.
