Ingredients

  • 1 box yellow or butter cake mix
  • Ingredients called for on the cake mix box (usually eggs, oil, water)
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 cup roughly chopped pecans (plus a little extra for topping)
  • 1 cup pecans, chopped or halved
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter
  • 2 tablespoons light corn syrup
  • 1/4 teaspoon salt
  • Pinch of cinnamon (optional)
  • Whipped cream or whipped topping (optional)
  • Extra pecan halves (optional)
  • A sprinkle of flaky sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 baking pan.
  2. Combine the cake mix, eggs, oil, water, and vanilla extract in a large mixing bowl. Stir until smooth.
  3. Pour the batter into the prepared pan and bake according to package directions, typically around 25-30 minutes.
  4. Melt butter in a medium saucepan. Add brown sugar and whisk until dissolved.
  5. Slowly pour in heavy cream while whisking. Bring to a simmer and cook for 2-3 minutes, then stir in vanilla and chopped pecans.
  6. Allow the cake to cool slightly once done. Poke holes all over the warm cake using a skewer.
  7. Pour the butter-pecan sauce over the cake, allowing it to seep into the holes. Let it absorb for at least 15 minutes.
  8. Melt butter in a skillet for the praline topping, add granulated sugar and corn syrup, and cook until golden brown.
  9. Stir in chopped pecans and salt, then spread onto parchment to cool until hardened.
  10. Top the cooled cake with praline clusters and optional whipped cream and pecan halves.
  11. Serve chilled or at room temperature, optionally with ice cream.
